Mac and cheese

Ingredients
530 g Whole Milk (Part or all of this may be substitute with another liquid, like water or chicken stock)
1 lb Dry macaroni
570 g Cheese (I used equal parts sharp cheddar, Monterey Jack, and Gouda.)
22 g Sodium citrate
Instructions
  1. Combine sodium citrate and milk in large sauce pan. Whisk until sodium citrate is fully dissolved.
  2. Turn stove on to medium heat until milk is gently simmering.
  3. Add small amounts of cheese (roughly golf ball sized) to milk using an immersion blender between each to make sure sauce is smooth.
  4. Set sauce aside. 
  5. Prepare macaroni according to package instructions, drain but don't rinse.
  6. Pour macaroni into sauce and stir, add any additional ingredients and serve.
