Instructions
- Dice all vegetables (small dice)
- Add olive oil and butter to a heavy bottomed pot or dutch oven over medium heat, add onions and cook for about 5 minutes, add the rest of the vegetables and cook for 8-10 until they are all soft.
- Add ground beef, italian sausage, and pancetta, raise heat to medium high, and cook until no pink remains in the meat.
- Lower heat to a fast simmer, scoop out excess fat (I tilted the dutch oven and used a coffee cup to scoop about a cup of grease), add wine and allow to simmer for about 10 minutes or until all wine has evaporated.
- Add milk and simmer for about 10 minutes until all milk has evaporated.
- Add diced tomatoes, tomato paste, bay leaf, and all spices/herbs. Stir well, cover, and allow to simmer for about 2 hours, stirring every 30 minutes or so.
