Ingredients
1 Red Onion
2 Celery Stalk(s)
2 Carrot(s) (Small, the mirepoix mix should be about 1:1:1 onion, carrot, celery)
5 clv Garlic
1⁄2 Red Bell Pepper
2 T Olive Oil
1 T Butter
1 lb Ground Beef
1 lb Italian Sausage
5 oz Pancetta
1 1⁄4 c Red Wine (I used a La Crema Pinot Noir)
1 c Whole Milk
29 oz Petite Diced Tomatoes
6 oz Tomato Paste
1⁄2 T Dried Basil
1⁄2 T Oregano
1 Bay Leaf
1 T Sea Salt
1⁄2 T Black Pepper
1⁄2 T White Pepper
Instructions
  1. Dice all vegetables (small dice)
  2. Add olive oil and butter to a heavy bottomed pot or dutch oven over medium heat, add onions and cook for about 5 minutes, add the rest of the vegetables and cook for 8-10 until they are all soft.
  3. Add ground beef, italian sausage, and pancetta, raise heat to medium high, and cook until no pink remains in the meat.
  4. Lower heat to a fast simmer, scoop out excess fat (I tilted the dutch oven and used a coffee cup to scoop about a cup of grease), add wine and allow to simmer for about 10 minutes or until all wine has evaporated.
  5. Add milk and simmer for about 10 minutes until all milk has evaporated.
  6. Add diced tomatoes, tomato paste, bay leaf, and all spices/herbs. Stir well, cover,  and allow to simmer for about 2 hours, stirring every 30 minutes or so.
